BBQ Kalua Pork Sandwich (Upper Division Winner)

Ingredients (Serves 5)

* 16oz Precooked Kalua pork
* 5 hamburger buns needed
* 2/3 cup BBQ sauce*

* 12 oz par-cooked frozen Ulu
* Canola oil for frying

* 1 head green cabbage (~5 cups shredded)
* 1/2 cup mayonnaise
* 1 1/2 tablespoon vinegar
* 1/2 tablespoon sugar
* 1/2 cup of pineapple
* Salt and pepper
Directions
Coleslaw:
1. Wash cabbage and remove outer leaves.
2. Slice thinly and add to large bowl.
3. In a separate smaller bowl mix together mayo, vinegar, sugar, and pineapple.
4. Add mixture to cabbage, along with salt and pepper to taste. Mix well.
5. Put in a container and into the fridge to rest 4-24 hours

BBQ Kalua pork:
1. Add fully cooked Kalua pork and bbq sauce into medium pan on medium heat.
2. Stir until mixed and hot.
3. Set aside.

Ulu Fries:
1. Heat up oil to 325-350.
2. Slice frozen Ulu into half inch thick strips
3. Fry Ulu in hot oil for 2 minutes on each side, or until golden brown.
4. Place on paper towels to soak up any excess oil and salt while hot.

Ulu in Coconut Milk with Cheese, Beans & Eggs (Lower Division Winner)

Ingredients

* 1 medium size ulu
* 1 medium onion
* 4 eggs
* 6 tbsp of butter
* 1 can of pinto beans
* 1 can of coconut milk
* 1 tsp salt
* 1/2 tsp black pepper
* 6 slices of cheese, smocked paprika.

Directions

1. Peel the ulu, cut into 4 pieces, cook in boiling water for 15 min.
2. Cut the onion, fry in 1/2 brick of butter.
3. Add mixed eggs to the onion, mix well.
4. Cut ulu into smaller pieces
5. Add 2 tbsp of butter and ulu to the onions/eggs mixture
6. Add beans, mix well.
7. Add coconut milk, mix well.
8. Add salt, pepper, and paprika.
9. Add cheese slices.
10. Serve when the cheese is melted.
11. Enjoy

Ingredients
* 15 ounces of taro (steamed or imu)
* ¼-½ diced white onion
* 2 tbsp finely chopped fresh limu
* 1 tbsp (or taste) Hawaiian Salt
* 2-3 tbsp crushed roasted kukui nut
* 1-2 tbsp sesame oil
* 2 pieces chopped green onion

Directions
1. If not prepared, peel one pound of kalo, cube and “steam” in instant pot for 15 minutes.
2. Dice kalo into small bite-size pieces, either ¼” or ½” cubes.
3. Add diced onions.
4. Squeeze liquid from limu kohu, chop finely, add to mix.
5. Add inamona (roasted kukui nut).
6. Add pa’akai (Hawaiian salt).
7. Drizzle sesame oil.
8. Gently mix with spoons.
9. Garnish with green onions.
10. Pau and ready to serve.

Ka~Ra Kim~Chi

Ingredients
* 1 napa cabbage
* 1 medium size potato per cabbage
* 1 medium size onion per cabbage
* 3 tablespoons of garlic
* 1 teaspoon miced ginger
* 2-3 green onion
* 1 radish *optional
* korean chili powder (고춧가루)
* ~6 tablespoons anchovy fish sauce
* ~2 tablespoons salted shrimp
* ½ Korean pear or apple per cabbage
Directions
1. Remove leaves, cut into 1 inches
2. Rinse, slowly add 1 cup coarse salt
3. Mix in salt, leave 30-60 min, compact
4. Boil potato (or use sweet rice flour)
5. Peel radish, cut thin slices or cubes
6. Chop 1 inch spring onions, set aside
7. Chop onions, garlic, peel ginger
8. Peel apple or pear, rough cut
9. Add onions, garlic, ginger, apples, blend w/ 3-4 tbsp fish sauce until combined
10. Wash salted cabbage 2 times, drain completely for another hour
Sauce (wear gloves)
1. Add blended mixture, mashed potatoes to bowl
2. Add chili powder, salted shrimp, fish sauce
3. Mix to combine, adjust to taste if needed
4. Add cabbage and mix (rub into every leaf)
5. Add radish and spring onions, mix until covered
6. Transfer to container, pack tight (add plastic wrap if using non kimchi container)
7. Make sure no space when closed
8. Enjoy fresh or ferment for about an hour then transfer to fridge to ferment 2 wks-month
Ulu Gnocchi

Ingredients
* 10 oz Par cooked ‘Ulu
* 2 medium potatoes
* 2 cups flour
* 2 large eggs
* 8 Tbsp butter
* 2 oz Parmesan cheese
* 1/2 cup fresh basil
* 1/2 lemon squeezed
* 2 bulbs garlic
Directions
1. Peel and dice potatoes.
2. Boil until soft.
3. Boil ulu until soft.
4. Mash together until fully mixed, no clumps.
5. Mix in two eggs.
6. Fold in 2 C. flour, roll into logs.
7. Cut desired gnocchi, boil until float.
Sauce:
1. Low heat 8 Tbsp butter
2. Add 2 bulbs cut garlic until soft

Once gnocchi is cooked, add to garlic butter sauce

Add 2 oz Parmesan and fresh basil and stir

Calamansi Goat Cheesecake

Ingredients
* 1 C. graham cracker crumbs
* 3 1/2 TBS butter
* 1/4 C. canned coconut milk
* 1/2 sweet condensed milk
* 6 oz goat cheese
* 8 oz cream cheese
* 2 TBSP calamansi lime juice
* Papaya/honey for garnish
Directions
1. Wash calamansi limes and papaya.
2. In a small metal pan, melt the butter.
3. Place graham crackers in large zippered bag, crush crackers
4. Add one cup graham cracker crumbs to small bowl
5. Add melted butter, stir until combined. Set aside
6. Place room temperature goat & cream cheeses in large bowl
7. Mix on medium until fully combined and creamy
8. Mix coconut and condensed milks on medium 1-2 mins
9. Add calamansi lime juice, stir to combine. Set aside
10. Press graham cracker crust into bottom of container
11. Add few spoonfuls cheesecake filling, tap to remove air
12. Add more graham cracker crumbs
13. Add last of cheesecake filling to top off jar
14. Gently tap to remove air bubbles
15. Chill in the fridge for an hour.
16. Before serving, garnish with papaya and honey drizzle
Pineapple Cheesecake

Ingredients
* 2.5 cups of graham cracker crumbs
* 1/2 cup melted butter
* 4 oz cream cheese
* 1/2 cup butter
* 2 cups powdered sugar
* 1 tub Cool Whip
* 20 oz crushed pineapple (drained)

Directions
1. Mix 2 cups graham crumbs w/ 1/2 cup melted butter
2. Pack down in 9×9 square pan
3. Whisk 4 oz cream cheese w/ 1/2 cup butter
4. Add 2 cups powdered sugar, 1 cup at a time
5. Mix in 1 tbsp pineapple
6. Layer and spread onto crust.
7. Combine Cool Whip w/ remaining crushed pineapple
8. Layer as well
9. Sprinkle remaining graham crumbs on cheesecake.

Fruit & Ginger Oat Banana Cookies

Ingredients
* 1 1/2 Cups Flour
* 1/2 Cups Oats
* 1/2 Thoroughly Mashed Banana
* 1 1/4 Stick (12 Tablespoons) Butter
* 3/4 Teaspoon Baking Powder
* 1 1/8 Teaspoon Baking Soda
* 1 Heaping Teaspoon Vanilla Extract/Essence/Paste
* 1/4 Tsp Salt (if Salted Butter, else 1 Tsp)
* 1 1/2 Cups Dried Fruit, Ginger, Cacao Nibs mix

Directions
1. Prehat oven
2. Mix ingredients
3. Drop on cookie sheet
4. Bake in 350 ° oven for 10-15 minutes.

Salad w/Figs & Quail Eggs

* 1 Romaine heart
* 6 boiled quail eggs
* 6 cherry tomatoes
* 10-12 mozzarella pearls
* 2 tbsp of sliced black olives
* 4 figs
* Dressing to taste

Directions

Combine the ingredients, enjoy.

* 3 Cups of Mango Chunks
* 1/2 cups Apple Juice
* 1/4 cup Soy Milk
* 1/4 cup Yogurt

Directions

1. Combine ingredients in blender
2. Pour into freezer-safe pan
3 Freeze for several hours (until hard)
4. Remove from freezer
5. Scoop into dish to serve
