Mokolai Sweet Potato Hash
- 3 cups Sweet potato, peeled, cut into 1/2-inch dice
- 1/4 cup Vegetable oil
- 2 largeOnions, cut into 1/2-inch dice
- 3 Tablespoon Maple syrup, or coconut syrup
- 2 teaspoon Ground cinnamon
- Salt, to taste
- 1/4 teaspoonBlack pepper, or to taste
- Scrub potatoes under running water.
- Peel and dice into ½-inch cubes.
- Parboil potatoes until cooked through, but not mushy.
- Drain and set aside to cool slightly.
- Heat vegetable oil in a large sauté pan. Sauté diced onions until golden brown.
- Mix in sweet potatoes, maple syrup, and cinnamon. Toss to coat well.
- Season with salt and pepper and serve.
