Shrimp and Watercress Salad

Ingredients
- 1 lb watercress
- 1/2 lb bay shrimp
- 3/4 cup red onion, 1/4 - inch diced
- 1/2 cup tomato, 1/4 - inch diced
Dressing:
- 1/2 cup mayonnaise
- 1/2 lemon (squeeze for juice)
- 5 tsp sugar
- 3/4 tsp dried dill weed or (1/2 Tbsp fresh)
- 1/2 tsp salt, or to taste
- 1/4 tsp pepper, or to taste

Notes
- Wash and cut watercress into 1 inch pieces. Drain well.
- Combine watercress with bay shrimp, red onion and tomato in a bowl and let chill.
- Mix dressing ingredients and add to salad right before serving.
Notes
- For a lower fat version, use low fat mayonnaise.
