Shrimp and Watercress Salad

    • 1 lb watercress
    • 1/2 lb bay shrimp
    • 3/4 cup red onion, 1/4 - inch diced
    • 1/2 cup tomato, 1/4 - inch diced



Dressing:

  • 1/2 cup mayonnaise
  • 1/2 lemon (squeeze for juice)
  • 5 tsp sugar
  • 3/4 tsp dried dill weed or (1/2 Tbsp fresh)
  • 1/2 tsp salt, or to taste
  • 1/4 tsp pepper, or to taste

  1. Wash and cut watercress into 1 inch pieces. Drain well.
  2. Combine watercress with bay shrimp, red onion and tomato in a bowl and let chill.
  3. Mix dressing ingredients and add to salad right before serving.

Notes
  • For a lower fat version, use low fat mayonnaise.
