Baked Kabocha Slices

Ingredients
- 1 kabocha squash, 2-3 lbs
- 1 Tbsp canola oil
- 2 Tbsp lemon juice
- 1 Tbsp reduced sodium soy sauce
- 4 Tbsp brown sugar
- 1 tsp ground cinnamon
- 3/4 tsp ground ginger
Directions
- Preheat oven to 325 degrees. Cut squash from top to bottom into 1 to 1 1/2 inch thick slices. Discard seeds and strings. Lay slices on an oiled baking sheet.
- Combine the remaining oil with the rest of the ingredients and brush onto the squash. Bake for 20 minutes. Turn and brush again and bake till done, another 20 -25 minutes. Brush again with marinade. If desired, broil the slices to brown them before serving.
