Baked Kabocha Slices

  • 1 kabocha squash, 2-3 lbs
  • 1 Tbsp canola oil
  • 2 Tbsp lemon juice
  • 1 Tbsp reduced sodium soy sauce
  • 4 Tbsp brown sugar
  • 1 tsp ground cinnamon
  • 3/4 tsp ground ginger

  1. Preheat oven to 325 degrees. Cut squash from top to bottom into 1 to 1 1/2 inch thick slices. Discard seeds and strings. Lay slices on an oiled baking sheet.
  2. Combine the remaining oil with the rest of the ingredients and brush onto the squash. Bake for 20 minutes. Turn and brush again and bake till done, another 20 -25 minutes. Brush again with marinade. If desired, broil the slices to brown them before serving.
