Sweet Potato Palau

Ingredients
- 3 large Okinawan sweet potatoes (approximately 9 cups)
- 2 Tbsp sugar
- 1/4 cup coconut milk
- 1/4 cup skim milk
Directions
- Boil whole sweet potatoes for 1 hour, or until tender. Cool.
- Peel skin off sweet potatoes and mash.
- In a medium bowl, gently fold in sugar, coconut milk and skim milk. Whip until fluffy.
- Chill until ready to be served.
