Okinawan Sweet Potato Hash

  • 3 cups (1 1/2 lb) sweetpotato, peeled, cut into 1/2-inch dice
  • 1/4 cup canola oil
  • 2 large (1 1/4 lb) onions, cut into 1/2-inch dice
  • 3 Tbsp maple syrup
  • 2 tsp ground cinnamon
  • 1 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste

  1. Parboil potatoes until cooked through, but not mushy.
  2. Drain and set aside to cool slightly.
  3. Heat canola oil in a large saut� pan. Sauté diced onions until nicely brown.
  4. Mix in sweet potatoes, maple syrup, and cinnamon. Toss to coat well.
  5. Season with salt and pepper and serve.

Notes
  • For a lower fat version, use a nonstick pan and 1/3 the amount of oil to sauté onions (1 1/4 Tbsp).
