Braised Squash with Garlic

  • 1 kabocha squash, (1-1 1/2 lbs)
  • 2 Tbsp olive oil
  • 1 Tbsp garlic, minced
  • 1/8 cup water
  • 1/8 cup chicken stock
  • 1/2 tsp salt, or to taste
  • 1/4 tsp pepper, to taste
  • 1 Tbsp parsley, minced

  1. Peel, seed, and chop squash into 1-inch cubes. Place olive oil in a large deep skillet and heat over medium high heat. Add squash and saut� till golden brown. Remove squash and drain oil from large pot leaving 1 tbsp.
  2. Return pot to stove. Add garlic and sauté till fragrant. Add liquids, reserved squash and cover. Cook till most of water evaporates. Do not stir squash.
  3. Season with salt, pepper, and parsley. Toss lightly then serve.
