Braised Squash with Garlic

Ingredients
- 1 kabocha squash, (1-1 1/2 lbs)
- 2 Tbsp olive oil
- 1 Tbsp garlic, minced
- 1/8 cup water
- 1/8 cup chicken stock
- 1/2 tsp salt, or to taste
- 1/4 tsp pepper, to taste
- 1 Tbsp parsley, minced
Directions
- Peel, seed, and chop squash into 1-inch cubes. Place olive oil in a large deep skillet and heat over medium high heat. Add squash and saut� till golden brown. Remove squash and drain oil from large pot leaving 1 tbsp.
- Return pot to stove. Add garlic and sauté till fragrant. Add liquids, reserved squash and cover. Cook till most of water evaporates. Do not stir squash.
- Season with salt, pepper, and parsley. Toss lightly then serve.
