Selection

Pick ripe fruits that are clean and reddish-pink in color. Fruits should have no signs of bruises, skin tears, or infestation.

Storage

Half-ripe fruits can be kept at room temperature, but ripe fruits should be kept in a cool place. Can be preserved by drying and processing into a ‘nut’ or by bottling

Preparation

  • Wash well before eating.
  • Peel the skin off the fruit and remove the seed.
  • Normally eaten fresh as a snack or in fruit salads.
  • Dip the flesh in citrus juice to prevent browning.
  • Be careful not to get fruit leaves on clothes as they stain.

Lychee

Lychee fruit has rough, green to reddish pink, wart-like skin. The flesh is white, translucent, and jelly-like. Ripe lychee has a sweet and smooth flavor.
