Pick crisp green lettuce greens whenever large enough to use.
Storage
Keep fresh, unwashed, covered loosely in a plastic bag or perforated bag and refrigerate. Does not freeze or store well for longer periods.
Preparation
- Wash well being sure to separate leaves and shake well to remove water.
- Lettuce is usually eaten fresh as salad.

Lettuce
Lettuce is a popular salad vegetable in most parts of the world including the Pacific. There are many varieties of lettuce to include cos lettuce (upright cylindrical), iceberg (head shape), curled-leaf lettuce and stem lettuce. They generally grow best at higher altitudes or cooler weathers and in well-drained, well-watered soils (Bailey, 1992).
